Puzzles and Baking...

While we patiently await the arrival of this baby.. (whom of which is 1 day shy of being a week over due) I have made every attempt to occupy my actions and thoughts outside of the realm of being late. Thus we have things flying out of the kitchen left and right and there is absolutely no way my bathroom could get any cleaner than it is ( I stopped counting, but I believe I have scrubbed it down at least 4 times this week...)

Now, I LOOOVVVEEE to bake. I love making all kinds of food but my heart lies with my measuring spoons and Kitchen Aid. I attended Culinary School and after spending a few months in the Culinary program I realized that my true love was baking and switched to Baking and Pastry soon after. I am always looking for new ideas in the kitchen and have even developed my own all natural energy bar.. but that's another story for another day. Since I love to bake so much I thought... what better way to occupy my time then to bake? Being so big and heavy it has been quite difficult to stand in the kitchen for an extended period of time to accomplish the baking I desire but yesterday I managed to keep up the strength and popped out a few recipes I have been meaning to try.

First one was a basic Blueberry Oat Bar. Nothing fancy or special but it sounded good to me at the time so why not?! It turned out to be quite delicious and made for a wonderful breakfast the next morning.



The next item I made was a Cranberry Orange Bread with a grapefruit glaze. Yummm... this one totally hit the spot and would be so easy to freeze and save for later of give as a gift. SUPER moist and yummy! Highly recommended!




Another thing I have always loved to do and have always had some weirdly amazing talent at is puzzles. I could sit and do them for hours and I am known to finish a 1000 piece one in one day. So recently my Dad decided to challenge me a little more and bought me a 2000 piece one. I started it this week and it is HUGE!! Our tables can hardly fit the monster of a jigsaw but I am enjoying the challenge and it has done a wonderful job of keeping my brain busy!!

Hopefully this baby will be here very soon!! But if he isn't, I have no shortage of baking ideas!! My poor family is going to gain 20 lbs in these few weeks I could be over due.
